Well , for the past eight years, I have been lucky enough to have been involved with the Beijing Cluster Cooking Competition. A gathering of 15 hotels whom all compete against each other to try to out beat and out shine each other in 6 categories, Barista, dessert themed coffee break , cold appetizers, black box, mixology, tea. Each team selects a team of 9 contestants whom represent each of the hotels. The teams ( some of them ) spend months practicing, some are under a democracy , others under a dictatorship of doing and making what the Executive Chef has created for them to produce. Which ever the case the teams all do there best to out shine the rest. Rules and judges make sure the teams are doing what is right, and not doing what they think is right. My job over the past years, and i should call it a job, but a priveldge was to be on the orgnizing committee, in some years, other year as a contestant hotel, and of last two years seving as a orgnizer and champion for the competition, bringing al the strings together so that it works like clock work.
Some years were better than others and easier as the team of DOFB’s moved on, the yonger and in experiencd ones moved in. So the core of the committee took on more responsibilty to drive the rest .
Now that the strong are gone, the competition has seesed for at least this year, so I have heard, a real shame as no one DOFB can drive it, is a pity.
What was once a dream , turned reality , now has turned a memory…
